Great Granola
cooking oil spray
1/2 c vegetable oil
1/2 c pure maple syrup or honey
1 1/2 c brown sugar
6 c old fashioned rolled oats
1 c wheat germ (optional)
1 c coconut
2 c chopped walnuts, almonds or pecans
place oven racks in the 2 center positions and preheat oven to 350 degrees. Line 2 jelly roll pans with aluminum foil and spray lightly with cooking oil spray.
combine oil, maple syrup and brown sugar in 1 qt microwave safe bowl for about 3 minutes, stir to dissolve any lumps.
mix well with the oatmeal.
spread in pans, sprinkle coconut over oats, nuts over coconut and place in oven. (this is so that the coconut and nuts get a little extra toasty on top)
every 10 minutes stir and switch pan placement in the oven, for about 20-25 minutes, taking care not to let the granola get too brown.
